The results of all of my extensive blood work and testing came back today, and showed several very important things. As most (or some, or very few…) of you may know, I have for years been suffering with a ton of health problems, and I think (hopefully) they were all solved today.
First and most significantly, I found out that I am severely insulin resistant. This means that whenever I eat anything with any kind of starch or sugar in it, my insulin spikes to dangerously high levels and then crashes to dangerously low levels. Can be deadly if one continues to eat those kinds of foods.
Second, I am still allergic to dairy, soy, and gluten. Pretty self explanatory.
Third, I am very anemic…meaning I don’t absorb iron well, and that can also contribute to my extreme fatigue and heart issues. And a fun fact i learned today: iron pills and supplements are not healthy. Apparently iron pills become oxidized in your body and not only don’t help in iron absorption but can also cause cancer. The best way to get iron is through natural food like leafy greens, fish, and red meat.
Fourth, I am vitamin D deficient. This is safe to take a supplement for, which I have started today. It will also help that I am going to Florida soon and will be out in the sun :)
Finally, my histamine levels are extremely high. Normal levels are apparently 115 and under, and mine was 209. Meaning something in my body (I don’t know if it’s food, or something else) is causing severe inflammation. Hopefully it was caused by the foods I was eating and will be resolved when I change my diet.
Basically, what I am allowed to eat is organic farm raised meats and fish, vegetables, eggs and fats such as olive oil and coconut oil. So in short, I am no longer a vegan. I’m sure most of you don’t care but I didn’t feel right continuing to post food-related things without you guys knowing that I’m not vegan anymore. But I will of course continue to maintain a strictly clean diet!
PLEASE UNDERSTAND that this does not mean I don’t approve of vegans, I think it is a wonderful thing, and everyone has a choice and is entitled to that choice. It’s just that a vegan diet is not healthy for me personally. But I know it is healthy for others. Everyone is different, and that’s ok. I just wanted everyone to know
